Salmon Pasta with Spinach and Pesto

Last week I prepared a salmon pasta for some of my colleagues and it was a hit. I enjoyed it so much that I made a second batch just for little ol’ me to enjoy right in front of my TV with a glass of wine and a good movie. You know how comfort foods in colder temperatures can get us? All fuzzy and happy inside…ha! It was pretty delicious and below are the ingredients.

  • 1 box of bow-tie (farfalle) pasta
  • Pink Salmon fillet
  • A bag of spinach (I sautéed mine before adding it to the pasta)
  • A few scoops of traditional pesto (to your liking)
  • Some type of garlic alfredo sauce (can’t remember the exact one) but not the entire bottle (unless you want it very creamy)
  • Salt, pepper, garlic salt, garlic powder, lemon pepper,lemon juice (also on salmon fillet) and maybe other seasonings..lol.
  • Shredded Parmesan Reggiano to top it off.

I tend to list my recipes very disorderly…lol, but hopefully you get the point. As I’m typing this post, my mouth is watering for some more, but unfortunately it’s all gone. Who’s ready for Thanksgiving??
